Rhapudding rockt!

jaaa, auch ich bin eine der erklärten rhabarber-liebhaberinnen. aber ehe ich jetzt poetisch von zartrosa stangen und der ersten frühlingsglückseligen begegnung auf dem markt schreibe ... sach ich einfach: rhabarber rockt! :) sobald er da ist, muss er aufs blech! 

irgendwie wehre ich mich immer ein bisschen dagegen, pudding zu verbacken. wobei auch pudding an sich ganz fantastisch ist! unerklärliche küchenabneigungen ... die ich mit der *rhabarber-vanille-tarte* überwunden habe. und das auf allerschmackigste weise.

backen, kochen, kühlen – und dann steht ein köstliches kuchenschnäuzchen auf der tafel!
zuerst: der teig.

*125g kalte butter, *60g puderzucker, *1 ei und *250g mehl erst mit dem mixer, dann per hand zu einem jeschmeidigen teig vermengen – ab in den kühlschrank damit für ein halbes stündchen (oder länger). teig ausrollen und eine gefettete tarteform auskleiden (eine springform von 26cm durchmesser geht auch – vielleicht sogar besser, denn meine tarteform war ein bisschen zu flach für die komplette vanille-rhabarber-nummer). mit einer gabel den boden einmal durchpieken, dann eine schicht backpapier und trockenerbsen zum blindbacken darauf verteilen. etwa 20 minuten im vorgeheizten öfchen (umluft, 200°) plus noch einmal 5-10 minuten ohne erbsen und backpapier. ab zum abkühlen!

denn jetzt kommt: der pudding!
hach ja, da kommt ein tütchen pulver zum einsatz ... das wird vermixt mit *3 EL zucker und *6 EL milch und in *340ml aufgekochte milch eingerührt – 1 minute köcheln lassen und in die tarteform füllen. (wer ein absolut fantastolöööses mutti- oder omi-puddingrezept im angebot hat, zaubert natürlich das in die tarte ... pfff, tütendriss!)
 
kleine abkühlpause, denn jetzt: rockt der rhabarber!
*1 pfund rhabarber schnibbeln, fertig machen fürs bad in *250ml kirschnektar und *75 g zucker, zusammen hochgeköchelt. den rhabarber 3-5 minuten mitkochen, dann herausfischen. *25g stärke mit *5EL wasser glattrühren, den kochenden kirschsaft damit andicken und ab mit dem rhabarber zurück in den topf. nach 10 minuten abkühlpause wandert der rhababsi auf pudding und teig, wird nochmal riiiichtig kalt gestellt ... RHABARBERGLÜÜÜÜCK!!!
... und das auch noch 2 tage später, wenn das rhabarberkompöttchen, das nicht mehr in die tarteform gepasst hat, zum frühstück im joghurt tanzt.
hach, doch noch ein bisschen rhabarberpoesie ... *schmacht* :)

Rhubarb is kinda like Asparagus ...

... It's only there for a certain amount of time every year and i have to eat it until i can't see it anymore. Here comes Rhubarb cake Number 41 this year ... This one's for my Dad. He got the cake and i got Asparagus and a lovely day in my parents garden. In my eyes i got the better deal. I can't wait for the cherry season to start. J.

Heavenly rhubarb!

You think we'd get sick of it after a while ... but ... No way! Rhubarb rocks! We can't get enough of it. It's pretty. It's pink and most importantly it's yummmmmmmmmmmmmy!

This is actually my first entry about baking! Shocking but true! To make it special i couldn't resist dedicating it to rhubarb (and upon a special wish of sister A. to cherries and apples).

Attention ladys: This recipe is completely without butter! Yes! No butter and only a tiny bit of sugar! I just won't mention the 400 ml cream ;o) The dough is fluffy and soft and melts on the tongue ... Definitely bowl-lickinglicous! I think i actually started purring while licking the bowl clean!



Next step: Select your fruits of the day and do all the necessary cleaning and cutting and slicing. Spread the dough out on a baking tray and decorate the prepared fruits on this little piece of heaven ... My colour scheme today: pink-red-cherrie-sweetness. Doesn't it look fantastic?




















Pop it in the oven, give it about 40 minutes and enjoy the smell that wafts through the whole apartment! For the final finishing touch i just melted some smooth passion fruit jam and added a dash of lemon zest to it. As soon as the cake was out of the oven i spread the passion fruit-lemon-juice on it and let it stand to cool.

So easy but so goooooooooooooooooooood! Voila, another fabulous cake is done!













Indulge, enjoy and always remember: there's absolutely no butter in this cake!
