Apple-Battle ... ach, ich will nicht kuchenfighten!

die S. hat 20 kilo äpfel auf balkonien ... na, sechzehneinhalb vielleicht noch, denn eins hat die mama des liebsten bekommen, mindestens 1,5 sind schon in den zwei baumbesitzermägen und eins bei der backschwesta gelandet. sie will daraus backen. für die kollegen. und ich? auch!

montagmorgen, 9:03. tatort agencyküche. 2 springformen. 1 schlagsahnebeauftragter (die accessoires deligieren wir ;)). APPLEBATTLE in da' haus! zum ersten meeting also 2 sorten apfelkuchen mit saaaahahahaaaaahne. und in der küche ein küchengemetzel aus apfelgeschmuse und hochprozentigem: der backschwesta zuckerpuppe war die flasche rum ausgerutscht ;)
(mir ist übrigens gestern die iBitch aka backblechfotomaschine ausgerutscht. auuuuf den kuchen! ich hätte das elend gerne beweisfotografiert, aber, naja, wie sollte das gehen ... und die andere cam ist vernachlässigerweise leer :o/)

und so wurde der *schmusige apfelschmandkuchen* für die schlacht parat gemacht:

*hübsch 250 gramm äpfel schälen, in schnitzerchen hacken und *zitronensaftbeträufeln ...
*200g butter, *250g zucker, *1päckchen vanillezucker, etwas *abgeriebene zitronenschale schaumig rühren ...
*3 eier, *200g mehl, *2 TL backpulver, *100g mandelblättchen, *3EL 43er likörchen oder bailey's oder milch dazurühren.
ab damit in die gefettete und gemehlte form und die äpfel muckelig darauf arrangieren ...
(ich habe nur die ränder gefettet, für den boden habe ich einen bogen backpapier eingespannt - wenn man nichts abschneidet vom papier kann man den kuchen ganz wunderprächtig hinterher vom boden der form heben :) ein tipp von der guten madame wiener – ich komme auf sowas ja nicht, wie man weiß ;))
*200g schmand, 2 eier, 100g zucker, 1EL 43er (oder milli oder bailey's) vermengen und auf der apfelparade verteilen ...
ab in den 160°C warmen ofen (umluft, elektroooonisch sind's 175°C) für etwa 60 minütchen. damit der schmuseschmand nicht zu dunkel wird, evtl. nach 30-45 mit alufolie abdecken.
jetzt niiiiiichts drauffallen lassen und vorm servieren vielleicht noch ein bisschen puderzuckern :)

... und übrigens war das eine ganz wundervollfriedliche äppelbäddle – sowas geht eben nur mit backschwestaaaan! :o*

Roll me in Almonds ...

... and i'm happy! alright, not me. but my little almond covered chocolate candy cookie balls. perfect bite size. perfect balance between cookie, white chocolate and almonds. pop one in your mouth and let your tongue indulge in this sweet little piece of the schlaraffenland. at least this is how i imagine the land of milk and honey. little chocolate candy cookie balls floating around and if you feel like one you just have to open your mouth ... i think i'm gonna rename my fridge "schlaraffenland" ;o)


i actually found this recipe in the "cook" book the sweetest S. was writing about yesterday but my trusty grocery store was basically out of everything yesterday  – plus it didn't really help that i (like most days) was shopping way too late for other stores to still be open – so i had to improvise. but i like improvising so it didn't really bother me. i like when things don't go like planed so i can tweak them like i really want them to be. most days i wouldn't do so without the "emergency" that something goes wrong though. if i am able to do it exactly like the recipe says i do it – to me it feels like cheating on the person who took hours and month and so much hard work and dedication and love to actually write a cook book. it's not fair to them. at least the first time it should be done "right". after that i can start tweaking it. so if i ever get to write a cook book y'all better do like i tell you to – at least for the first time ;o)

here it goes: my version of chocolate cookie candy almond balls
300g white chocolate
130g butter cookies
100g heavy cream
2 tbsp. rum
100g almonds
chop the chocolate into small pieces
mix the chocolate with the cream and let it melt in a bowl over hot, steaming water ...
... stir until it's smooth and glossy.
crumble the cookies up real fine (i used a food processor but you can do it by hand, if you prefer) and – you knew it would come at some point – add 2 tbsp. rum
pour the melted chocolate-cream over the cookies and mix it together until it's a – it'll look kinda gooey – yummy chocolate-cookie-sauce. cover the bowl up and put it into your fridge for at least 2 hours. 
get to work with a teaspoon, take of small portions, roll them to little balls between your hands, roll the neat little balls in the choped (make your food processor work a lil for you) almods and voila there done. keep them in the fridge and don't forget to make a trip to the land of milk and honey once inna while to give yourself the amazing sensation of one or two or three chocolate cookie candy almond balls.


gotta go, the dough for my strawberry cake is done and needs some attention. and i still have to cook some pudding. and melt chocolate ... the life i have :)

Strawberry-i-don't-want-to-study-cake with melted dark chocolate

1 more week until my law exam (liebste backschwester! exam as in klausur. nicht exam as in examen. das wäre dann finals. und da bin ich erst in 1,5 jahren! und vor den finals werde ich aber sowas von lernen und du wirst zur stärkung für mich backen!) and i reallyreallyreally didn't want to spent my sunday evening studying. bad, i know. and i already regret it – i think.  no, i deeply regret it.
what i don't regret though is baking this fabulous strawberry cake with lots of chocolate and custard and – super secret secret ingredient to make the shortcrust even better (basically it makes everything better and i always have a bottle close when i bake ;o)) – a dash of rum in the crust and yes, in the custard as well! rum is your friend and please – pretty please with a cherry on top – try not use rum aroma. rum aroma is not your friend.
the mini cake is for my sweet sister. since i always take the baked goods into the office or to friends or give them away to the needy and greedy, the sister – the poor thing – never gets any cake. today she got her own lil cake.
it's shortcrust and chocolate. do i have to say anything? 
lots of juicy delicious strawberries. i can never decide if my heart goes out for strawberries or cherries in the summer. i ♥ strawberrycherries.
chocolate, again! i was in a melting frenzy and couldn't stop. melting chocolate is delicious and fun and sweet and it turns into melted chocolate with strawberries ... thank goodness, the dane is coming home soon ;o)

and now the cake is gone. seriously. it didn't even take a whole morning. the sun is shining and it's finally summer, there will be more cake later. cherry cake. what a perfect day.

erdbeer-ich-drücke-mich-vorm-lernen-kuchen mit geschmolzener dunkler schokolade! der titel sagt alles. die bilder noch viel mehr. geschmolzene dunkle schokolade muss nicht kommentiert werden – oder? erdbeeren mit geschmolzener dunkler schokolade erst recht nicht.
der däne kommt bald nach hause, dann gibt es wieder anständige torten und kuchen und kekse und cupcakes and muffins und und und und backwaren! und ich werde aufhören über geschmolzene schokolade zu schreiben – vermutlich!
